The Fountain of Youth Summit World in Phoenix Gilman, author of "Do not Diet – The naked truth about weight loss."

Kevin: When we go to the supermarket, and see all those low fat, no fat net carbs, everything you just said, you know, what is politics?

PHOENIX: Oh, stay away from them. Stay away from it … here's the thing again. Yes, it is not, I'm so surprised that there is a lot of them still on the shelves. I am so … I'm just being so fascinated when I go to the store to see what they are perpetuating on consumer confidence. And many consumers, with due respect, not have the time to do what I did to research some stuff. They want to trust what food manufacturers are telling. So, they put on the label: "It is fat free." For those who believe it is … fat, then they will grab. And probably going to overeat because they think: "Well, is fat free. "And it's the same with carbs net carbohydrates and impact. It's all BS, if I may say so.

Kevin: Sure.

PHOENIX: Because anything that has the warning that there is some kind of deception label behind him. I tell my clients: "Look, have you once put it in a nice tomato or a nice piece of fruit? "No, because its aim is, in these foods, it is true, I mean, how the food business stay in business? They do this by selling their food. And how do you ensure that we can sell it and becomes a loyal customer loyal? They would have to make us addicted. And how can we addicts? Hiding under the sugar and all sorts of names. Thus, for food, again, is not good to eat healthy fat. I'm not talking of trans fats found in processed potato chips and cookies and stuff. I'm talking about good healthy fats. Therefore, it comes to eating the good fats healthy and stay away from all the labeling is misleading in the context of low-fat, you know, net carbohydrates and products of impact carbohydrates.

Kevin: Yes. And speaking about good fats and bad fats, what are the good guys, a lot of people here, fat, good fat, good. Well, that is, you know?

PHOENIX: Well, good fats, Kevin, to make things as eggs, whole eggs. The egg is a most perfect food for those who are concerned about cholesterol. Another myth. I talked about it in great detail in the book, that is, they have to eat well, fat healthy, healthy fat and healthy is good cholesterol. Thus, eggs, whole eggs.

KEVIN: Why have people saying, you know, egg whites …

PHOENIX: Egg whites only?

Kevin: Yes.

PHOENIX: Well, that was perpetuated for many years by the grain industry and I would say that it was not a success, would you?

Kevin: Yes.

PHOENIX: Because it really is. For those who really understand how the body works, again, you have to activate the insulin because the body … fat. And healthy fat does not cause the insulin response.

KEVIN: A-ha.

PHOENIX: So, by eating healthy good cholesterol, cholesterol you have to eat every meal in reality, Kevin, to stop domestic production of the same body. And if you do not eat healthy cholesterol good with every meal, your body made out of carbohydrates you eat, and that's not good form. That is what will lead to plaquing of the arteries.

Kevin: OK. Therefore, your body is creating these hormones from cholesterol?

PHOENIX: Yes Your body will create its own cholesterol. You have their own internal mechanism to do so. If I do, if you do not consume foods containing it, which is what, then, when it eats, it closes its own production thereof.

Kevin: OK.

PHOENIX: But some other healthy fats are olive oil, extra virgin olive oil, grape seed oil, flaxseed oil, nuts and seeds, unsalted please with any of the smoked, you know, and salty things. Avocado, organic mayonnaise, cheese fresh white, the mozzarella, feta and goat cheese. Those are all wonderful good healthy fat. And, of course, your fish, you know, like salmon and stuff like that to be health, I see it more as a source of protein, but you also get a good source of fat in that too.

KEVIN: A-ha. What about fish oils and flaxseed oils are good too?

PHOENIX: Of course, for its Omega-3 and 6 years and things like that, I suggest, you know, in my book I give them a list, I chapters, only one chapter of the excellent low-GI carbohydrates.

KEVIN: A-ha.

PHOENIX: And then a list of foods that anyone could find in my house on any given day and that is a list of all types of healthy fats is good, low GI carbohydrates, different foods, different fish for Omega-3 and so on. So … I've had many people who says, "Oh, you have to write a cookbook." But it was more important for me to give people the tools to teach them how not to think for themselves same as it will take a lifetime in front, who lives in a cookbook? I mean, is not going to happen.

KEVIN: Yes. Could you give us an overview of some of the things in your house now?

PHOENIX: Yeah. I just … hey now, there is … This morning, I had three eggs with mozzarella cheese …

KEVIN: A-ha.

PHOENIX: … with a little tomato and olive oil.

KEVIN: A-ha.

PHOENIX: I have always, I have about two dozen eggs, I go through about two dozen eggs a week and are a great snack, and to people who say: "Oh, I do not know what to have for lunch." Boil some eggs, making a good sandwich.

KEVIN: A-ha.

PHOENIX: I have some raw almonds, I can make my own mix, usually with an assortment of almonds, macadamia nuts, walnuts, mix all that together and make my own mix.

KEVIN: Oh, great.

PHOENIX: I whipped cream that I put in my green tea decaffeinated I sit here, topped with a little cinnamon, absolutely wonderful, better than any coffee.

KEVIN: So, fresh cream, which means, as if none of the farm, or …

PHOENIX: Yes Fresh whipped cream, you know, do not spray cream, but the fresh, real cream, whirled around.

KEVIN: A-ha.

PHOENIX: Why? Because it is, even though I try to limit the intake of any beef product, is a good source of healthy fat and have zero means zero sugar carbohydrates. So …

KEVIN: Do you.

PHOENIX: … is not the fat-free milk or skimmed milk, again, is a carbohydrate and a carbohydrate fluid, which will affect the level blood sugar even more drastically. So for me, is all the whipped cream.

KEVIN: And could you explain that a little more? I think many people do not realize …

PHOENIX: The liquid carbohydrates?

KEVIN: … that milk, dairy Lactose is a sugar and carbohydrates that are not.

PHOENIX: Well, not exactly, Kevin, and the thing is two like the fruit. When I tell people, "Oh, I mean, fruit juices, they go," Oh, you're telling us is not healthy? " I said, "No, no, no. It's how they eat carbohydrates. "Because the fruit has fructose, fruit sugar.

KEVIN: A-ha.

PHOENIX: Milk has lactose, milk sugar. And so when you have, not only is a carb, but as the fruit juice and milk have a liquid carbohydrate. And as liquid carbohydrates, which affect the level of blood sugar much more spectacular. Why? Because it is nothing more than liquid. It will go much faster into the bloodstream. He has nothing, the body does not have to take time to break it.

KEVIN: A-ha.

PHOENIX: So, what I recommend, of course, I want to eat fruit. There are better off than others and mine, when I'm working with clients who have an indicator of excess insulin that is where the weight they carry around your midsection that is most damaging to your health, it is lower GI fruit, which, for me, berries. I recommend any of the berries. But again, to eat in their natural state. Do not take the form of juice. Just look at any bottle. When you go to the grocery store, Kevin, you can pick any bottle, look at all the fruit juices that are sold, I just read the panel. Look at the amount of sugar is there and see how many servings are there. There are often surprising, at least thirty years, if not to sixty eighty grams of sugar in a product juice. So again, it comes to making carbohydrates in their natural form. The fruit and the like, so that the body has its ability to break the fiber that will help to reduce blood sugar responses will be caused by it.

KEVIN: So, these juices, if you look at them in the grocery store say one hundred percent juice?

PHOENIX: Yes, but you can say one hundred percent juice or what they can say whatever, but still, it's just pure sugar water.
